The spice styling of each dish is unique. You could easily say that each dish has its own unique personality. Unlike many Cajun and Creole places these-days, Chef Joe lays great emphasis on cooking the spices well, and taking the food through various stages of preparation. This is not a short cut approach to cooking. And it shows. Just taste that spinach and mushroom etoufeee. Mmmmmmmm. Feel the complex nature of the spicing, flavors, and textures kick in.
The happiest day of my life was when they opened the Yats in Carmel... okay that and my wedding day... oh and birth of my kids.

Lunchtime just isn't the same since I changed jobs and left the downtown area. No more Yats. It was a biweekly obsession. Farewell, Brian and my other Yats friends. I miss you -- and the Maux Choux!
